Southern food is a cuisine all its own. Being born and raise in the South I was raised on some of the tastiest Southern food. Southern staples such as country style steak and gravy, fried okra, roasted potatoes and garden tomatoes were a regular meal for me and my family.
So what makes a southern dish a southern dish? In my mind it needs to have two things. A lot of flavor and be made with a lot of butter! This southern fried potatoes recipe has both of those things and I’m sure its a side dish that you and your family will love.
Should I Peel My Potatoes
Deciding to peel or not to peel your potatoes is a personal preference. I personally don’t peel my potatoes in this recipe and many other recipes because of the added health benefits. The skins are a good source of fiber, vitamins, minerals, and antioxidants.
Should I Boil My Potatoes Before Frying
While par-boiling your potatoes can help them cook more quickly when pan frying, I personally don’t boil mine because my goal is simplicity and that means saving a step if I can. I have found that even without boiling my southern fried potatoes cook evenly and crispy.
Should I Fry My Potatoes in Butter or Oil
I have fried my potatoes in both butter and oil. While oil, such as avocado or lard has a higher smoke point than butter, I have found that making this recipe with butter provides a more delicious flavor. The reason that some recommend not using butter is because that at high temps butter burns. I have not had a problem with burning when cooking this recipe.
What Kind of Potatoes Should I Use for Frying?
The best potatoes to use for frying are Russet or Idaho.

Southern Fried Potatoes Cooking Tips
- Be sure to chop your potatoes the same size to ensure even cooking
- Use grass fed butter for the best flavor
- Don’t over stir your potatoes while cooking

Ingredients
- 1/2 of a large onion
- 5 TBS of butter
- 2 large or 3 medium russet potatoes
- Salt
- Pepper

How to Make Southern Fried Potatoes
Heat your cast iron skillet to medium/high heat
Add three tablespoons of butter and allow it to melt
Dice your onion into small pieces and add it to the skillet. Stir the onions in the melted butter and allow to cook for several minutes, until translucent.

While the onions are cooking, chop your potatoes to approximately 1/2 inch cubes.
Add remaining butter to the skillet and allow it to melt
Add the potatoes to the skillet with the onions and melted butter. Stir all of the potatoes in the skillet ensuring that they are completely covered with butter.
Place a lid on the skillet and allow the potatoes to steam for about 5 minutes.
Remove the lid and flip the potatoes. Allow the potatoes to cook for an additional 5 minutes on the other side with the lid off. Don’t stir the potatoes during this time. The key to crispy potatoes is to not over stir them while cooking.

Continue to flip the potatoes every 5 minutes until fully cooked and a outer crispness is achieved. I have found that this is usually achieved in approximately 20-25 minutes
Add salt and pepper to taste and enjoy!
