On to week two! I hope you enjoy these simple to make recipes.
Disclaimer, these recipes are not original to me. I didn’t create them…I just love making them. I enjoy being able to share other bloggers recipes and I hope you will check out their content as well. Here is our meal plan for the upcoming week. Let me know which meals you try and which ones you enjoy the most!
Week 2
Sunday – Sourdough French Toast
Like I mentioned in last week’s post, we have a family tradition of having breakfast for dinner every Sunday evening. This sourdough french toast recipe is super yummy. For this recipe I use my homemade sourdough bread but feel free to use whatever bread you and your family loves most. Topped with some syrup, fresh fruit and homemade whipped cream this french toast is a real treat!
Monday – Sourdough Pizza
Homemade pizza is the best! We make a homemade sourdough crust and homemade sauce. We top our pizza with a variety of toppings from onions to pineapple and then top it off with fresh mozzarella cheese. This recipe definitely won’t disappoint and will definitely become a regular on the monthly meal menu.
Tuesday – Pineapple Fried Rice
Fried rice is such a simple meal and one that you can practically throw your whole refrigerator into. You know, all of those veggies that you just have one or two of left in the drawer taste delicious when added into the mix. I love that this recipe has the sweetness of pineapple and the saltiness of the cashews. I will say that I omit the curry powder but I always like to add in a few scrambled eggs for some extra protein and this time I added some chicken as well.
Wednesday – Tuna Patties with Veggies
This is a simple and frugal meal that you can make when you are running short on time. Every time we make them we are always so surprised by how delicious they are. I do suggest purchasing Safe Catch Tuna to use in this recipe. I recommend this brand because it has the lowest level of mercury content than any brand of canned tuna. You can find Safe Catch in some grocery stores but if not you can purchase it on Amazon HERE. When we have tuna patties we like to saute a bag of organic frozen veggies in some butter and we have a great, healthy meal.
Thursday – Sweet Potato, Chicken and Rice Casserole
This is a savory casserole that the whole family is sure to enjoy. I like to cook a whole chicken in my instant pot and use some of the meat for this recipe and then save the rest for later. This recipe is also versatile in that you can use butternut squash or sweet potatoes. We personally love the flavor of sweet potatoes. The slight sweetness of the cranberries mixed with the tangy flavor of the Parmesan cheese is a great flavor combination. This is a meal that adults and kids alike will love.
Friday – Chinese Stewed Beef
This is a new recipe for our family this week. We often get several packs of stew beef meat in our meat box and I don’t like making the same recipe over and over again so this week we are branching out and bringing another culture to our stew beef meat. This meal had great flavor. You can pair it with some sauteed broccoli or some edamame.
Saturday – Homemade Chicken Noodle Soup
We love soups in our house! There is nothing better than a warm soup, with homemade broth on a cold day. I make our own homemade bone broth in my instant pot and it is the key ingredient in all of the soups we consume. This chicken tortellini soup is one of our favorites. This time we just made it with regular egg noodles and it was just as yummy.
